Easy 5 Ingredient Vegan Protein Cookies

We all love a sweet treat now and again, but before you crack open that packet of full fat, double chocolate fudge cookies give our healthy alternative a try. Refined sugar free, low fat, high protein and not to mention DAMN TASTY!! Perfect for a movie snack, a quick pre or post workout bite or even bake ahead of time for an easy breakfast on the go.

 

Ingredients (makes 6-8 cookies)

1 1/2 Mashed Bananas (save the other half to top)

1 1/2 Cup Rolled Oats

1/2 Cup Frozen Fruit (we used Blueberries and Cherries)

1 Scoop Clean Lean Protein Powder in Vanilla

1-3 Tbsp Unsweetened Almond Milk

1/2 Tsp Cinnamon (optional)

Topping Options:

Sliced Banana, Almonds

 

Other ingredient options:

Add Raisins and finely chopped apple with Cinnamon & Nutmeg if your feeling autumnal

Add Raw Cacoa Powder and Cacoa Nibs for a more chocolaty taste

Add Chia Seeds or Flax seed for an extra boost of protein

 

Method

1. Mash the banana with a fork until a creamy consistency

2. Add in the oats and almond milk and mix until the oats are full coated

3. Add in the Clean Lean Protein Powder, cinnamon (optional) and frozen fruit and mix well

4. Scoop a heaped Tbsp amount onto a baking sheet and flatten into small discs

5. Top with sliced banana or almonds (or both!)

5. Bake at 180°C or 350°F for about 10 mins or until brown

6. Serve and enjoy!!
